In the early 1940's a small country mercantile that the locals referred to as la tienda del Hatche was a source for townspeople to buy or barter items such as flour, shoes, and hand-pumped gas.  The mercantile was built and operated by Roy Hatch and family on land purchased from Tranquilino Serrano, one of the three original Spanish settlers in Coyote.  In the late 1950s the mercantile closed and the Hatch family moved.
For over two decades the mercantile and adjacent house remained abandoned until purchased by Fidel and Consuelo Martinez.  The Martinez family moved into the house in the late 1970s and have made restorations and improvements to both the house and the old mercantile building.
In 1999 the old mercantile building became the office of a local entrepreneur.  It accommodated production for the company until 2006 when the office was moved to the east coast. After 2006 the old mercantile underwent further modifications and has since become Consuelo's Gallery.
The artists featured in Consuelo's Gallery, many of whom follow Spanish traditional art styles in their work, are from the surrounding communities. Their art includes bead work, jewelry, quilts, Spanish tinwork, acrylic and watercolor paintings, weavings, and much more.
